Wash the rocket and shake dry. Puree 50 g rocket and eggs, season with salt and pepper. Bring milk and butter to the boil. Add flour and stir until the mixture comes off the bottom of the pot. Add semolina, stir in well and remove from the heat. Gradually stir in the egg mixture and allow to cool
Mix vinegar and honey, season with salt and pepper. Fold in the oil. Form dumplings from the semolina mixture with 2 damp tablespoons and poach in portions in boiling salted water for 8-10 minutes. Take out and drain on kitchen paper. Wash and halve the tomatoes. Mix the rocket, tomatoes and vinaigrette and arrange on plates with the dumplings
