Clean, wash and drain the arugula. Cut tomatoes into thick strips. Beat the eggs and season with salt and pepper. Cut 1/3 of the rocket into coarse pieces. Heat oil in a coated pan, sauté tomatoes and rocket in it.
Pour eggs over it and let them simmer covered for 6-8 minutes. Turn the omelette onto a plate, cover with mortadella and the remaining rocket. Garnish as desired with olives and cherry tomatoes.
