Roasted zucchini slices on tomato vegetables

Ingredients

Servings: 4
  • 1 medium onion
  • 1 Garlic clove
  • 3 TABLESPOONS Olive oil
  • 1 package (500 g) chunky tomatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 2 Courgettes
  • 4 TABLESPOONS grated
  • 7-10 Tbsp Emmental cheese
  • 7-10 Tbsp Basil

Directions

    Peel and finely dice the onion and garlic. Heat 1 tablespoon of oil and fry both in it. Add tomatoes and season with salt, pepper and paprika. Clean, wash and slice the zucchini and fry them in the remaining oil until golden brown.

    Arrange the tomato vegetables in 4 ovenproof dishes. Place zucchini slices on top and sprinkle with the cheese. Bake under the hot grill of the oven. Garnish with basil.
