Roasted apricots with Amarettini butter with foam

Ingredients

  • 500–600 g ripe, firm apricots
  • 3-4 Tbsp Lemon juice
  • 25–30 g Amarettini
  • 40 g Butter
  • 2 TABLESPOONS Sugar
  • 150-200 ml Soy drink with calcium

Directions

    Wash the apricots, drain, cut in half and remove the stones. Sprinkle the flesh with lemon juice. Coarsely crumble the Amarettini. Heat 20 g butter in a pan.

    Put the apricots in the pan, sprinkle with sugar and fry for about 3 minutes while turning. Add amarettini and remaining butter, foam briefly and arrange on 4 small plates. Whip the soy milk with a chopping stick until frothy. Spread some soy foam on the apricots as desired
