Roast turkey with apple-marjoram stuffing

Ingredients

  • 1.25 kg Turkey Breast
  • 5 sour apples
  • 4 Stem(s) Marjoram
  • 2 discs Bacon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Onions
  • 2 Bay leaves
  • 300 g ribbon noodles
  • 100 g Gorgonzola cheese
  • 150 g Whipped cream
  • 2 TABLESPOONS sauce thickener
  • 7-10 Tbsp Herbs
  • 7-10 Tbsp Kitchen yarn

Directions

    Wash the turkey breast and pat dry. Cut deeply 2 - 3 times lengthwise. Wash apples. Core 1 apple, cut into slices and halve them. Wash marjoram, cut bacon into pieces. Fill meat slices with prepared ingredients.

    Tie the roast into shape with kitchen string. Season all around with salt and pepper. Place on a grid, slide the fat pan of the oven under it. Roast in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 1 1/4 hours. Peel and halve the onions. Spread the onions and bay leaf on the fat pan. Deglaze frying every 1/2 hour with 1/4 litre of water. Place the remaining apples on the grill 1/2 hour before the end of the cooking time. Meanwhile prepare noodles in boiling salted water according to package instructions. Cut gorgonzola into small pieces. Take the fat pan out of the oven and pour the roast stock through a sieve.

Bring cream and roast stock to the boil, thicken with sauce thickener. Stir in gorgonzola. Season to taste with salt and pepper. Cut the roast open. Serve with apples, noodles and sauce. Serve garnished with herbs
