Roast duck breast with dried fruit

  • 7-10 Tbsp Pour 4 pers
  • 2 magrets de canard
  • 6 dried or soft apricots
  • 80 g blanched almond
  • 7-10 Tbsp sel et poivre

Directions

    1 Preheat the oven to 210 °C (th 7). Toast the almonds in a dry frying pan, crush them coarsely. Cut the apricots in half, to the thickness of the almonds.

    2 Salt and pepper the duck breasts. Cut into the skin, forming criss-crosses. On the flesh side of one of the duck breasts, spread the apricots and sprinkle half of the almonds. Cover it with the second duck breast, skin on top. Tie them together like a roast.

    3 Place the duck breast roast in an oven dish and season with salt and pepper. Bake for 20 to 30 minutes (depending on the desired cooking time). Sprinkle the rest of the almonds 10 minutes before the end of cooking. Cover with aluminium foil 5 minutes before serving.
