Ribbon noodles with saffron sauce, mozzarella and prawns

Ingredients

Servings: 4
  • 400 g raw shrimps (about 15 g each; without head, in shell)
  • 4 Shallots
  • 3 TABLESPOONS Olive oil
  • 2 knife points saffron threads
  • 1 TABLESPOON Flour
  • 150 ml dry white wine
  • 50 g Whipped cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 400 g ribbon noodles
  • 125 g Mozzarella cheese
  • 1 small pot of basil

Directions

    Peel the prawns and remove the intestines. Wash shrimps and pat dry

    Peel and finely dice the shallots. Heat 2 tbsp. oil and fry shallots for approx. 4 minutes, turning until translucent. Add saffron, toss briefly in the fat and dust with flour. Deglaze with wine, 150 ml water and cream. Bring to the boil while stirring, season to taste with salt and pepper. Keep sauce warm

    Meanwhile, prepare the pasta in boiling salted water according to the instructions on the packet. Pluck the mozzarella into small pieces. Wash basil, shake dry, pluck leaves from the stalks and tear into small pieces. Heat 1 tablespoon of oil in a frying pan and fry the prawns for about 3 minutes. Season with salt and pepper

    Drain the noodles, put them back into the pot, fold in the sauce and prawns. Arrange noodles and sprinkle with basil and mozzarella
