Ribbon noodles with ratatouille

Ingredients

Servings: 4
  • 200 g ribbed ribbon noodles
  • 7-10 Tbsp Salt
  • 1/2 Aubergine
  • 1 small zucchini
  • 1 Onion
  • 1/2 red, green and yellow peppers
  • 2 TABLESPOONS Olive oil
  • 1 TEASPOON dried Italian herbs
  • 1/8 l clear broth (instant)
  • 7-10 Tbsp white pepper

Directions

    Cook the pasta in boiling salted water for 10-12 minutes. Clean, wash and cut the vegetables into small cubes. Heat the oil in a pot and sauté the vegetables in it. Add herbs and stock and cook for 5 minutes. Season to taste with salt and pepper. Arrange noodles with ratatouille on plates
