Ribbon noodles with oyster mushrooms

Ingredients

  • 1 small onion
  • 150 g Oyster mushrooms
  • 2 medium-sized tomatoes
  • 50 g ribbon noodles
  • 7-10 Tbsp Salt
  • 1 tsp (5 g) Oil
  • 7-10 Tbsp black pepper
  • 1-2 TABLESPOONS Soy sauce
  • 1 Stem fresher or slightly
  • 7-10 Tbsp dried thyme

Directions

    Peel and finely chop the onion. Clean the mushrooms, clean them with kitchen paper and, depending on their size, cut them into smaller pieces if necessary. Wash tomatoes and cut into fine cubes

    Cook the pasta in plenty of boiling salted water for about 12 minutes until al dente

    Heat the oil in a coated pan. Sauté the onion in it. Add mushrooms and fry for about 5 minutes. Season with salt and pepper. Fry the tomatoes briefly

    Deglaze with 5-6 tablespoons of water and soy sauce. Bring everything to the boil and simmer for 1-2 minutes. Wash the thyme, remove the leaves and fold in. Drain the noodles and mix into the mushrooms. Season to taste

    Oyster mushrooms provide plenty of easily digestible protein. And they are a good alternative to meat, because they also contain a lot of iron and B vitamins. And that at just 12 calories per 100 g!
