Spaghetti with wild garlic prawns

Ingredients

Servings: 4
  • 20 frozen shrimps (approx. 30 g each; without head, in shell)
  • 20 big leaves ramson
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 untreated lemons
  • 500 g Spaghetti
  • 4 TABLESPOONS Olive oil

Directions

    Defrost shrimps overnight in the refrigerator

    Peel the shrimps, except for the tail fin, and remove the intestines. Wash the shrimps and dab them dry. Wash wild garlic, shake dry and blanch very briefly in boiling salted water. Rinse immediately in ice water. Season prawns with salt and pepper and wrap in prepared wild garlic leaves

    Wash lemons hot, rub dry. Cut the zest of 1 lemon into thin strips using a zest cutter. Halve the fruit and squeeze the juice. Cut remaining lemon into corners

    Cook the pasta in boiling salted water according to the instructions on the packet. Heat the oil in a frying pan and fry the prawns for about 4 minutes while turning. After approx. 3 minutes fry the lemon wedges with the shrimps. Remove and deglaze the frying set with lemon juice and approx. 250 ml pasta water. Season with lemon zests and pepper

    Drain the noodles, put them back into the pot and fold in the sauce. Arrange noodles and prawns
