Ribbon noodles with lemon spinach

Ingredients

  • 1 kg leaf spinach
  • 1 medium onion
  • 1 Garlic clove
  • 400 g ribbon noodles
  • 7-10 Tbsp Salt
  • 4-5 Tbsp Olive oil
  • 1 TEASPOON Vegetable broth
  • 2 untreated lemons
  • 1 TABLESPOON Sugar
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp ground cumin
  • 7-10 Tbsp untreated lemon

Directions

    Clean the spinach, wash it thoroughly and cut it into coarse strips. Peel onion and garlic, dice finely

    Cook the pasta in plenty of boiling salted water for about 10 minutes until al dente

    Heat the oil in a pot. Sauté onion and garlic until transparent. Add spinach and pour on about 1/8 l water. Bring to the boil, stir in broth and steam covered for about 5 minutes

    Wash lemons hot and rub dry. Grate the zest of one of them finely. From the other lemon, peel half of the peel in fine strips. Squeeze both lemons. Add 5-6 tablespoons lemon juice, sugar and grated lemon peel to the spinach. Season with salt, pepper and 1 pinch of cumin. Simmer for about 1 minute more

    Drain the pasta and mix immediately with the spinach. Sprinkle with lemon strips and garnish
