Ingredients

  • 1.25 kg Red cabbage
  • 2 TABLESPOONS Sunflower oil
  • 100 g Pine nuts
  • 2 TABLESPOONS demerara sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Balsamic vinegar
  • 100 ml Port wine
  • 7-10 Tbsp Basil

    Clean and wash the red cabbage and cut into thin slices

    Heat the oil in a large frying pan. Roast the pine nuts in it for about 3 minutes. Remove the kernels and fry the red cabbage slices in the nut fat for approx. 5 minutes, turning them over. Sprinkle with sugar. Season with salt and pepper. Deglaze with vinegar and port, bring to the boil and braise in the closed pan for about 5 minutes. Arrange on plates, sprinkle with pine nuts and garnish with basil
