Red Cabbage-Coriander-Coleslaw with Minute Steak Rolls

Ingredients

  • 1/2 Head (approximately 800 g) Red cabbage
  • 300 g Carrots
  • 1 collar (225 g) Spring onions
  • 10 Stem(s) Coriander
  • 2-3 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 2 TABLESPOONS hulled sesame seed
  • 2 TABLESPOONS Mayonnaise
  • 2 TABLESPOONS Sriracha (hot chili sauce)
  • 1-2 TABLESPOONS freshly squeezed lime juice
  • 4 thin pork minute steaks (approx. 75 g each)
  • 5- Spice Powder
  • 4 TSP Peanut cream
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp wooden skewers

Directions

    For the salad, clean and wash the cabbage and cut into fine strips. Peel, clean and roughly grate the carrots. Clean and wash spring onions, cut the light half of the spring onions into fine rings.

    Wash the coriander, shake dry, put 2 stems aside for garnishing. Pluck leaves from the remaining stems.

    Put cabbage, vinegar, 1 teaspoon salt and 1 teaspoon sugar in a large bowl, knead well with your hands. Leave to stand for about 20 minutes. Meanwhile roast sesame seeds in a pan without fat while turning, remove.

    For the sauce, mix mayonnaise, chilli sauce and lime juice. Mix red cabbage, spring onion rings, carrots and sauce well. Leave to stand for about 15 minutes. In the meantime, cut the remaining spring onion green into pieces of approx. 8 cm length.

    Wash the meat, dab dry and tap flat between 2 layers of foil. Place meat side by side on the work surface.

    Season with spice powder. Spread evenly with peanut cream. Place spring onion sections evenly on top. Roll up tightly from the short sides. Stick together with wooden skewers.

    Heat the oil in a frying pan and fry the meat thoroughly, turning it all around. Then fry over a low heat for about 3 minutes. Season cabbage salad with salt and pepper and arrange in a bowl with the rolls.

    Sprinkle with sesame seeds and garnish with coriander.
