Wash, clean and slice the aubergine and zucchini. Clean, wash and cut the peppers into strips. Peel onion and garlic. Halve and slice the onion, dice the garlic. Wash the thyme, shake dry, put something aside for garnishing, chop the rest finely
Heat 4 tablespoons of oil in a large frying pan. Fry the onion and bell pepper for about 5 minutes, turning them over. Add thyme, eggplant, zucchini and garlic. Season with salt, pepper and sugar, fry for another 5 minutes. Add chunky tomatoes, bring to the boil.
Season to taste with vinegar, 1-2 tbsp. oil and curry. Garnish with set aside thyme. Ciabatta bread tastes good with it
