Quinoaburger with sweet potato chips and mustard cream

Ingredients

  • 200 g red quinoa
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Paprika powder
  • 1 can(s) (425 ml each) Kidney beans
  • 1 Onion
  • 1 Garlic clove
  • 7 TABLESPOONS Oil
  • 100 g (piece) Cheddar
  • 4 Disc/s (approx. 80 g) Cheddar
  • 1 Egg (Gr. M)
  • 8 TABLESPOONS Breadcrumbs
  • 600 g Sweet potatoes
  • 1 glass (à 370 ml) Onions in balsamic vinegar (Borettane onions)
  • 4 TABLESPOONS Yoghurt salad cream
  • 1 TABLESPOON sweet mustard
  • 4 Bread roll
  • baking paper

Directions

    For the meatballs, rinse and drain the quinoa. Cook in 400 ml boiling salted water according to the instructions on the packet. Then let it cool down a little. Rinse beans in a sieve and drain. Peel onion and garlic, dice finely. Heat 1 tbsp. oil in a pan (with lid). Sauté the onion and garlic until translucent. Grate 100 g cheddar roughly. Finely mash the beans with a fork.

    Knead quinoa, beans, onion mix, grated cheese, egg and breadcrumbs. Season to taste with salt and pepper. Form the mixture into 4 flat meatballs, cover and chill.

    Preheat oven (electric cooker: 225 °C/circulating air: 200 °C/gas: see manufacturer). Line baking tray with baking paper. Peel, wash and cut sweet potatoes lengthwise into thick chips. Mix in a bowl with 1 tsp salt and 4 tbsp oil, spread on the baking tray. Bake in a hot oven for about 30 minutes. Turn the French fries after about 15 minutes.

    Drain the onions and cut into slices. Mix salad cream and mustard. Heat 2 tablespoons of oil in a frying pan. Fry the meatballs for about 3 minutes on each side. Cover with 1 slice of cheese each. Close pan with lid and let cheese melt briefly. Season chips with paprika. Cut the rolls in half horizontally. Cover the lower halves with salad cream, meatballs, onions and a few French fries. Serve the rest of the fries with it.
