Quick noodle salad with meatballs

Ingredients

Servings: 4
  • 250 g Pasta (e.g. penne rigate)
  • 7-10 Tbsp Salt
  • 3 discs Toast
  • 1 Onion
  • 500 g mixed minced meat
  • 1 egg (size M)
  • 1-2 TEASPOONS medium hot mustard
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 100 g Gouda cheese
  • 200 g small tomatoes
  • 150 g Spring onions
  • 2-3 TABLESPOONS Oil
  • 1 (400 g) Mug of meat salad with salad cream
  • 3-4 Tbsp white balsamic vinegar
  • 1 pinch Sugar
  • 7-10 Tbsp Parsley

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet. Drain, rinse well with cold water, cool in a sieve and drain. In the meantime soak toast in water.

    Peel and finely chop the onion. Knead minced meat, egg, toasted bread, onion, salt, pepper, paprika and mustard with the dough hooks of the hand mixer. Form 8 meatballs from it. Finely dice the cheese.

    Wash the tomatoes and cut into slices. Clean and wash spring onions and cut into rings. Heat the oil in a large pan and fry the meatballs for about 4 minutes at medium heat. In the meantime mix noodles, meat salad and vinegar.

    Mix in spring onions, Gouda and tomatoes. Season to taste with salt, pepper and sugar. Serve garnished with parsley.
