Bring 100 ml red wine and sugar to the boil with the fruit. Mix starch with 2 tablespoons of red wine until smooth and stir in. Bring to the boil again and simmer for 2 minutes. Leave to cool. Stir quark with vanilla pulp and lemon peel until smooth. Beat egg white until stiff.
Add icing sugar and beat for another 2 minutes. Fold the egg whites into the quark mixture. Pour the fruit into an ovenproof dish. Add the quark and egg mixture. Gratinate in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for approx. 10 minutes
