Ingredients

  • 1 glass Plums (720 ml)
  • 5 TABLESPOONS Red wine
  • 1 Cinnamon stick
  • 1 Star Anise
  • 2 TABLESPOONS + 75 g sugar
  • 1 TEASPOON Cornstarch
  • 75 g Butter
  • 120 g Flour
  • 2 TABLESPOONS crushed almonds
  • 1 knife tip Cinnamon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp grated rind of 1/2 organic lemon
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Icing sugar

Directions

    Drain the plums and collect the juice. Bring 100 ml of juice, wine, cinnamon stick, star anise and 2 tablespoons of sugar to the boil. Stir starch and 2 tablespoons of juice until smooth, use to thicken the juice. Bring to the boil again. Stir in plums and let cool down.

    Melt the butter and let it cool down a little. Mix flour, almonds, 75 g sugar, cinnamon, 1 pinch of salt and lemon peel. Add butter. First use the dough hooks of the hand mixer, then work into crumbles with your hands.

    Chill for about 15 minutes.

    Remove the cinnamon stick and star anise from the compote. Divide the plums into four small greased ovenproof dishes (or into one large one). Spread crumbles on top. Bake in the preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for 20-30 minutes.

    Let it cool down a little and serve lukewarm. Dust with icing sugar. Serve with whipped cream or a scoop of ice cream.
