Prawns with mango chutney

Ingredients

Servings: 4
  • 1 large ripe mango (approx. 600 g) or 2 ripe mangos (350 g each)
  • 2 Onions, 1 lime
  • 1 (approx. 250 g) big apple
  • 120 g Sugar, e.g. brown
  • 7-10 Tbsp salt, white pepper
  • 8-10 Tbsp Vinegar (e.g. apple vinegar)
  • 2 TEASPOONS medium hot mustard
  • 1 small red chili pepper
  • 2 TABLESPOONS Raisins
  • 12 prawns ready to cook (without head, with shell; approx. 20 g each)
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp leaf salad and untreated lime slices

Directions

    Peel and dice the flesh of the mango. Peel and chop the onions. Squeeze the lime. Peel, core and dice the apple

    Bring the prepared ingredients with sugar, salt, vinegar and mustard to the boil while stirring. Simmer over medium heat for about 40 minutes, stirring frequently.

    Wash, carve, seed and chop the chili. Peel and chop the ginger. Wash and drain raisins. Add ginger, chilli and raisins to the chutney about 5 minutes before the end. Season to taste with salt. Pour immediately into 3 prepared twist-off glasses (each containing approx. 250 ml). Close, cool upside down

    Shrimps wash, peel. Cutting, gutting. Fry in hot oil from both sides for about 3 minutes, season. Serve, add 1 glass of chutney and garnish
