Prawns with mango and orange dressing

Ingredients

Servings: 4
  • 12 raw shrimps (approx. 20 g each; without head, with shell)
  • 100 g Babyleaf salad
  • 1 ripe mango
  • 1 small red chili pepper
  • 4 TABLESPOONS Orange juice
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp sugar, salt, pepper
  • 6 TABLESPOONS good olive oil

Directions

    Peel the prawns down to the tail fins. Make a longitudinal incision in the back and remove the dark intestine with a sharp knife. Rinse shrimps cold and dab dry.

    Wash the salad and spin dry. Peel the mango and cut the flesh first off the stone and then into slices. Clean the chilli, cut lengthwise, remove seeds, wash and cut into thin rings.

    For the dressing, mix orange juice with vinegar and 1 pinch of sugar. Fold in 4 tablespoons of oil. Season to taste with salt and pepper.

    Heat 2 tablespoons of oil in a frying pan. Fry the prawns for 3-4 minutes while turning. After approx. 2 minutes add chilli rings and fry. Season with salt and pepper. Mix salad, mango and dressing and arrange on plates with prawns.
