Prawns in wasabi dough with glass noodle salad

Ingredients

Servings: 4
  • 100 g Glass noodles
  • 2 Carrots
  • 1 red pepper
  • 2 Spring onions
  • 2 red chillies
  • 1 piece(s) (approx. 20 g) Ginger
  • 1 organic lime, 3 tablespoons soy sauce
  • 1 TABLESPOON Honey
  • 1 TABLESPOON Sesame oil, 2 tablespoons oil
  • 7-10 Tbsp Salt
  • 3 tablespoons (30 g) Cornstarch
  • 3 (30 g) str. tbsp. flour
  • 2 (45 g each) Tubes of wasabi paste
  • 16 (approx. 500 g; without head, with skin) raw prawns
  • 1 l oil for frying
  • 1 potty Coriander

Directions

    For the salad, pour boiling water over glass noodles and soak for about 2 minutes. Drain and cut into approx. 7 cm long pieces. Clean or peel and wash the vegetables. Cut carrots and peppers into thin strips, spring onions into thin rings.

    For the salad dressing, clean, wash and seed the chillies and cut them into rings. Peel and finely chop the ginger. Wash the lime hot, dry and grate the peel. Squeeze the juice. Mix soy sauce, 2 tablespoons lime juice and zest, honey, chilli and ginger.

    Add sesame oil and oil and add salt if necessary. Stir in pasta and vegetables. Leave to stand for about 30 minutes.

    For the batter mix starch and flour. 1⁄8 Add l ice cold water and mix to a smooth dough. Stir in wasabi paste. Season with salt. The dough should have a viscous consistency.

    If it is still too liquid, stir in some flour.

    Peel prawns, except for the tail fin. Carve the back lengthwise and remove the dark intestine. Wash shrimps, dab dry. Hold the shrimp with the help of two forks and pull them through the dough, let them drip off a little.

    Heat the frying oil in a pot to approx. 180 °C. Fry the prawns in portions for approx. 4 minutes until crispy, turning from time to time. Drain on kitchen paper.

    Season salad again. Wash the coriander and shake dry. Cut the leaves into strips and sprinkle over the salad. Serve with the prawns.
