Prawn skewers with apple chutney

Ingredients

Servings: 4
  • 1 Onion (e.g. red)
  • 1 red pepper
  • 1 small red chili pepper
  • 2 large apples
  • 1 TEASPOON Mustard seeds
  • 100 ml White wine vinegar
  • 150 g demerara sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 250 raw peeled shrimps (fresh or frozen)
  • 1 untreated lime
  • 2 TABLESPOONS Oil
  • 8 wooden skewers

Directions

    Peel onion and ginger. Clean and wash the peppers. Finely dice onion, ginger and paprika. Cut chilli pepper lengthwise, remove seeds, wash and cut into rings. Wash, peel, quarter, core and chop apples

    Boil everything up with mustard seeds, vinegar, sugar and a little salt. Let it boil down for 30-40 minutes, stirring frequently. Season to taste. Let it cool down

    Defrost the frozen shrimps. If necessary, cut into the back and remove black intestine. Rinse shrimps and dab dry well. Wash the lime and cut into pieces

    Put the prawns and lime pieces alternately on skewers. Fry in hot oil for 4-5 minutes. Season with salt and pepper. Serve with chutney. Delicious with baguette

    Drink: cool white wine
