Prawn skewers on garlic mashed potatoes

Ingredients

Servings: 4
  • 1 kg floury potatoes
  • 3 Garlic cloves
  • 7-10 Tbsp Salt
  • 1 collar (approx. 50 g) Rocket
  • 24 (à 20 g) ready-to-cook shrimps
  • 3-4 Tbsp Oil
  • 7-10 Tbsp Pepper
  • 12 wooden skewers

Directions

    Peel, wash and quarter the potatoes. Peel garlic. Cook 2 cloves of garlic and potatoes in boiling salted water for about 20 minutes. Clean and wash the rocket, chop it up a little and let it drain.

    Wash the prawns, dab dry and put them on skewers. Drain the potatoes and collect 200 ml of water. Add 2 tablespoons of oil and potato water to the potatoes and mash to puree. Cut 1 clove of garlic into slices.

    Heat 1-2 tablespoons of oil in a frying pan. Fry the skewers and garlic for 3-4 minutes while turning. Season with salt and pepper. Fold the rocket into the purée. Arrange puree and prawn skewers in bowls.

    Add the fried garlic.
