Peel, wash and finely dice the carrots. Peel and chop onions and garlic. Fry the minced meat in 1 tbsp. hot oil until crumbly. Fry onions, garlic and carrots briefly and season.
Wash the thyme, pluck it. Add tomato paste to the minced meat and sauté. Add the tomatoes, juice and stock. Chop the tomatoes. Add thyme. Simmer on low heat for about 20 minutes. Season to taste
Wash or peel the potatoes thoroughly and cut them into long thick sticks. Heat 2 tablespoons of oil in a large frying pan. Fry the potatoes for about 20 minutes, turning them until golden brown. Season with salt and pepper. Arrange potatoes with the Bolognese
