Potato salad with smoked trout

Ingredients

Servings: 6
  • 1 1/2 kg Potatoes
  • 1 Onion
  • 6 TABLESPOONS Fruit vinegar
  • 4 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6 Eggs (size M)
  • 200 g Rocket salad
  • 400 g smoked trout fillets
  • 1/2 500 ml-bottle Sylter salad dressing

Directions

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. Rinse under cold water, drain and peel. Peel and finely chop the onion. Mix vinegar, onion and oil. Season with salt and pepper. Cut the potatoes into slices and marinate them with the prepared marinade

    Boil the eggs in boiling water for 5-7 minutes until soft. Clean, wash and shake the salad dry and cut into short strips. Break trout fillets into small pieces. Peel and dice eggs. Mix potatoes and salad dressing. Carefully fold in remaining prepared ingredients
