Potato salad with meatballs

Ingredients

Servings: 7
  • 1.2-1.5 kg new potatoes
  • 4 Eggs
  • 1 medium cucumber
  • 3 Peppers (e.g. green, yellow and red)
  • 1 small romaine lettuce
  • 2 medium-sized onions
  • 2 Garlic cloves
  • 500 g Whole milk yoghurt
  • 4-5 Tbsp Salad Mayonnaise
  • 1 TEASPOON Lemon juice
  • 7-10 Tbsp salt, white pepper, sugar
  • 500 g Pork sausage
  • 7-10 Tbsp sweet paprika, 2 tablespoons oil
  • 1/2 bunch Parsley

Directions

    Wash the potatoes and cook covered for about 20 minutes. Boil eggs hard for about 10 minutes. Quench both, peel and let them cool down

    Clean and wash the cucumber, peppers and salad. Cut into pieces or strips. Peel and finely dice onions and garlic

    Mix yoghurt, mayonnaise and lemon juice. Stir in the garlic and half the onions. Season with salt, pepper and 1 pinch of sugar. Cut the potatoes into slices. Mix cucumber, paprika, salad, potatoes and salad dressing. Leave to stand for about 30 minutes.

    Knead the ground pork and the remaining onion. Season with pepper and sweet paprika. Form small balls from it. Fry in hot oil for 5-6 minutes. Cut the eggs into slices. Wash and chop the parsley. Season potato salad to taste. Carefully fold in the meatballs and eggs. Sprinkle parsley over it.
