Potato rösti with apples and sausage with apple compote (Schoalett)

Ingredients

  • 800 g Potatoes
  • 1 Onion
  • 1 Egg
  • 3 TABLESPOONS Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 sour apple
  • 1 TEASPOON Lemon juice
  • 75 g streaky smoked bacon
  • 150 g fine pork/beef sausage
  • 2 TABLESPOONS Oil
  • 1-2 stem(s) Parsley
  • 7-10 Tbsp Apple slices

Directions

    Peel, wash and finely grate the potatoes. Peel and finely grate the onion. Mix potatoes, onion, egg and flour. Season with a little salt and pepper. Apple wash, quarter, remove core.

    Cut apple quarters into small pieces, drizzle with lemon juice and add to the potatoes. Cut the bacon into small cubes. Dice Mettwurst. Heat oil in an ovenproof pan. Brown the bacon in it.

    Fold the sausage into the potato mixture and add to the pan. Fry the potato pancakes in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 30 minutes. Wash the parsley and chop finely except for something to garnish and sprinkle over the schoalett.

    Garnish with apple slice and parsley. Apple compote tastes good with it.
