Potato pan with sausage balls

Ingredients

  • 750 g new potatoes
  • 50 g streaky smoked bacon
  • 1-2 fine unboiled veal sausages (à approx. 100 g)
  • 2 TABLESPOONS Oil
  • 1 collar Spring onions
  • 2 Tomatoes
  • 200 g small mushrooms
  • 7-10 Tbsp salt, white pepper
  • 3-4 Stem(s) Thyme
  • 2-3 tablespoons (75 g) Fresh cream

Directions

    Wash potatoes thoroughly and halve or cut into large pieces

    Cut the bacon into strips and let it crisp in a large pan. Press the sausage meat directly from the skin as dumplings into the hot bacon fat and fry until golden brown while turning. Take out

    Add oil to the frying fat and heat. Fry the potatoes until crispy while turning. Then cover and fry over medium heat for another 15 minutes. Take out

    Clean, wash and chop the spring onions and tomatoes. Clean, wash and possibly halve the mushrooms. Put everything into hot frying fat and fry for about 5 minutes. Season with salt and pepper

    Add potatoes, dumplings and bacon to the vegetables. Mix everything well and braise again briefly. Season to taste with salt and pepper. Wash and chop the thyme. Put crème fraîche as a thick blob and sprinkle with thyme.
