Ingredients

Servings: 4
  • 1 kg Potatoes
  • 2-3 TABLESPOONS Oil
  • 1 red and green pepper
  • 1 collar Spring onions
  • 100 g smoked streaky bacon in cubes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp dried rosemary and thyme
  • 50 g black olives in slices
  • 1 untreated lemon
  • 200 g Fresh cream

Directions

    Wash the potatoes thoroughly, grate them dry and cut them into slices. Heat the oil in a pan. Fry the potatoes at medium heat for about 20 minutes while turning. Clean, wash and cut the peppers into strips.

    Clean, wash and cut the spring onions into rings. 5 minutes before the end of the cooking time add bacon, paprika and spring onions. Season with salt, pepper, rosemary and thyme. Fold in olives. Wash lemon hot and grate dry.

    Peel off some zests from the shell. Rub off the rest of the shell. Halve lemon, squeeze juice from 1/2 lemon. Mix crème fraîche, grated lemon peel and juice. Season to taste with salt and pepper.

    Sprinkle the crème fraîche with the zests, put a dash of crème fraîche on the pan. Add the rest.
