Ingredients

Servings: 4
  • 800 g Potatoes (triplets)
  • 2 (250 g each) red peppers
  • 1 Leek (leek; 200 g)
  • 2 (75 g each) thin slices of released Kasseler cutlet
  • 2 tablespoons (10 g each) Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp dried marjoram
  • 4 Eggs (size M)

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. Clean, wash and cut the peppers into small pieces. Leek clean, wash and cut into rings. Cut smoked pork loin into small cubes.

    Drain potatoes, quench, peel and possibly halve. Heat 1 tablespoon of oil in a pan. Fry the diced sausage in it and take it out. Add potatoes and peppers to the frying fat and fry for approx. 8 minutes.

    Cook the leek for the last 3 minutes. Season with salt, pepper and marjoram. Add Kasseler again. Heat 1 tablespoon of oil in a second pan. Break the eggs and fry them in the pan. Season with salt and pepper.

    Serve potatoes and fried eggs together.
