Potato mince tortilla

Ingredients

Servings: 4
  • 1 kg waxy potatoes
  • 100 g dried tomatoes
  • 1/2 bunch Spring onions
  • 3 TABLESPOONS Oil
  • 250 g mixed minced meat
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Eggs (size M )
  • 125 ml Milk

Directions

    Wash potatoes thoroughly and cook in boiling water for about 20 minutes. Cut tomatoes into strips. Clean and wash spring onions and cut into thin rings. Heat 1 tablespoon of oil in a pan and fry the minced meat in it for about 4 minutes until coarsely crumbly.

    Season with salt and pepper and remove from the pan. Drain the potatoes, rinse and peel. Cut the potatoes into slices. Heat 2 tablespoons of oil in a large coated ovenproof pan. Brown the potatoes in it in portions.

    Add minced meat, tomatoes and spring onions, season with salt and pepper. Beat the eggs and milk, season well with salt and pepper. Pour egg milk over the potato mince pan. Place the pan in a preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) and let it stand for 20-25 minutes.
