Gratinated pork loin with paprika sauerkraut and parsley potatoes

  • 1 kg triggered Kasseler
  • 1 TABLESPOON Oil
  • 1 red pepper
  • 1 can(s) (580 ml) Wine sauerkraut
  • 50 g medieval Gouda cheese
  • 800 g Potatoes
  • 7-10 Tbsp Salt
  • 2 stem(s) Parsley
  • 3 Stem(s) Thyme
  • 15 g Butter
  • 20 g Cornstarch

    Dab meat dry. Heat oil in a flat roasting pan. Brown the smoked pork loin on all sides, then add 300 ml water. Roast in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see

    Quarter the peppers, clean and wash them. Cut the bell peppers into strips. Put the sauerkraut in a sieve and drain. Grate cheese. Peel and wash potatoes and cut in half or quarters depending on size.

    Cook the potatoes in boiling salted water for about 20 minutes. Wash parsley, shake dry and chop the leaves into small pieces.

    Approximately 10 minutes before the end of the cooking time of the Kasseler, sprinkle cheese on the surface and gratinate. Remove the pork loin from the roaster and keep it warm in the switched off oven. Loosen the roasting set, pour the liquid through a sieve into a small pot.

    Add the sauerkraut and paprika to the roaster. Add 2-3 tbsp. roast stock and 2 tbsp. water and let it braise for 10-15 minutes while stirring occasionally. Wash thyme, shake dry and pluck leaves, except for a stalk, and chop them into small pieces.

    Add half of the thyme to the sauerkraut.

    Drain the potatoes. Add butter and parsley and keep warm. Fill up to 300 ml with water. Stir starch and 3-4 tbsp water until smooth. Bind the stock with it and let it simmer for about 1 minute.

    Arrange smoked pork loin on sauerkraut, pour some sauce over it and garnish with the remaining thyme. Add potatoes and the rest of the sauce.
