Potato cubes with green vegetables

Ingredients

Servings: 4
  • 1 kg young leaf spinach
  • 300 g Celery
  • 1 Onion
  • 2 Garlic cloves
  • 1 kg Potatoes
  • 4-5 Tbsp Olive oil
  • 15 g clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 30 g Parmesan cheese

    Sort the spinach, wash thoroughly and drain in a large sieve. Clean, wash and cut the celery into small pieces. Peel and finely chop the onion. Peel garlic and chop finely.

    In the meantime heat 2-3 tablespoons of oil in a wide saucepan. Sauté onions and garlic until translucent, add celery and cook for 2-3 minutes at medium heat. Add spinach and let it collapse while turning.

    Season vigorously with salt, pepper and nutmeg.

    Finely slice the Parmesan cheese with a peeler. Arrange potatoes and vegetables on plates, sprinkle with parmesan.
