Portuguese sweet potato soup with sausage

Ingredients

  • 250 g Chorizo sausage (alternatively Cabanossi)
  • 1 Onion
  • 1 Garlic clove
  • 650 g Sweet potatoes
  • 400 g Potatoes
  • 1 TABLESPOON Olive oil
  • 1 l Chicken broth
  • 350 g leaf spinach
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Peel the skin off the sausage and cut the chorizo into slices. Peel onion and garlic and dice finely. Peel, wash and chop sweet potatoes and potatoes. Heat the oil in a large pot, fry the sausage in it and take it out. Steam onion and garlic in the frying fat until transparent. Add potatoes and deglaze with broth. Cover and cook for about 20 minutes.

    Wash, clean and chop the spinach thoroughly. About 5 minutes before the end of the cooking time, add the sausage and spinach to the soup and finish cooking. Season to taste with salt and pepper
