Pork roulade with baked fruit

Ingredients

  • 250 g mixed fried fruit
  • 4 thin pork cutlets (approx. 200 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Oil
  • 1 Onion
  • 4-6 Allspice seeds
  • 4 Juniper berries
  • 2 TABLESPOONS Flour
  • 7-10 Tbsp Parsley
  • 7-10 Tbsp Roulade needles or wooden skewers

Directions

    Soak the baked fruit in cold water for about 15 minutes. Beat the escalopes flat and season with salt and pepper. Cut the fruit into cubes and spread on the meat slices. Roll up roulades and pin them with roulade needles or wooden skewers.

    Heat the oil in a pot and fry the meat all around. Peel and quarter the onion. Add to the meat together with the allspice seeds and juniper berries and fill up with 1/2 litre water. Cover and stew for about 1 hour in a closed pot at medium heat.

    Remove the roulades and keep them warm. Mix the flour with some cold water. Pour into the sauce while stirring and bring to the boil. Season to taste with salt and pepper. Serve the roulades with the sauce. Garnish with parsley.

    Boiled potatoes and red cabbage taste good with it.
