Pork roulade in beer sauce

Ingredients

Servings: 4
  • 750 g Potatoes
  • 500 g Broccoli
  • 2 Onions (about 40 g each)
  • 8 thin slices of pork cutlet (approx. 75 g each)
  • 3 TABLESPOONS Mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 discs (10 g each) Bacon
  • 50 g Релиш огурца
  • 4 TABLESPOONS Oil
  • 1 TEASPOON clear broth (instant)
  • 100 ml Altbier
  • 2-3 TABLESPOONS Whipped cream
  • 7-10 Tbsp a few squirts of lemon juice
  • 1-2 TABLESPOONS dark sauce thickener
  • 7-10 Tbsp Parsley and lemon slices
  • 7-10 Tbsp wooden skewers

Directions

    Wash the potatoes and cook them in boiling water for about 20 minutes. Quench, let cool down a little and peel. In the meantime clean and wash broccoli. Peel onions and cut into fine rings.

    Wash the meat, pat dry, tap a little flatter. Brush with mustard and season with salt and pepper. Halve the bacon and place it on the meat and spread the relish on top. Roll up the roulades firmly and pin them with small wooden skewers or a roulade needle.

    Heat 2 tablespoons of oil in a frying pan. Fry the onion rings for about 5 minutes and remove. Add 1 tablespoon of oil to the pan and fry the roulades in it all around for about 10 minutes. Deglaze the roulades with 300 ml water and add stock.

    Pour in the Altbier, bring to the boil, cover and leave the roulades to braise for 10-15 minutes. Meanwhile cook broccoli in boiling salted water for about 7 minutes. Cut potatoes in half and fry in the remaining oil in a coated pan until golden brown.

    Season with salt and pepper. Bring the sauce to the boil and refine with cream. Season with lemon juice, salt and pepper. Stir in the sauce thickener, bring to the boil briefly. Arrange roulades in the sauce with onion rings, broccoli and potatoes.

    Garnish as desired with lemon slices and parsley.
