Pork knuckles on braised vegetables

Ingredients

Servings: 6
  • 6 small knuckles of pork (about 600 g each)
  • 2 Bay leaves
  • 4 Juniper berries
  • 2 Cloves
  • 7-10 Tbsp Salt
  • 1 bunch of greens
  • 4 Onions
  • 1.5 kg Sweet potatoes
  • 4 TABLESPOONS Sesame seed
  • 3 TABLESPOONS Mustard
  • 2 TABLESPOONS liquid honey

Directions

    Wash knuckles, pat dry. Boil up plenty of salted water with bay leaf, juniper and cloves. Add the knuckles and cook for about 1 hour

    Remove the knuckles, drain and place them in the fat pan of the oven. Braise in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) for approx. 2 hours

    Clean or peel and wash the soup greens. Cut carrots into sticks, leek into rings, celery into cubes. Peel onions and cut into slices. Peel and wash sweet potatoes, cut in half lengthwise and cut into slices

    Spread the vegetables and potatoes around the knuckles for the last approx. 45 minutes. Pour 500 ml of knuckle stock and sprinkle with sesame seeds. Mix mustard and honey. Spread it on the knuckles about 15 minutes before the end of the cooking time
