Pork chops in onion sauce with Maultaschen

Ingredients

Servings: 4
  • 400 g Onions
  • 1 TABLESPOON Flour
  • 5-6 Stem(s) Marjoram
  • 1 pack of vegetarian Maultaschen with fine vegetables (4 pieces, 400 g)
  • 7-10 Tbsp Salt
  • 4 Pork chops (200-250 g each)
  • 20 g clarified butter
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS Oil
  • 1 TABLESPOON Tomato paste
  • 150 ml dry red wine
  • 250 ml Vegetable broth
  • 20 g Butter or margarine

Directions

    Peel onions and cut them into thin rings. Swivel onion rings and flour in a bowl. Wash the marjoram, shake dry and chop coarsely except for something to garnish. Let Maultaschen simmer in boiling salted water for 10-12 minutes.

    Wash the chops and pat them dry. Heat clarified butter in a large pan. Sauté the chops in it in portions while turning them briefly. Season with salt and pepper and place on a baking tray.

    Cook in the preheated oven (electric cooker: 80-100 °C/ circulating air: 50-75 °C/ gas: see manufacturer) for 8-10 minutes.

    Add oil to the hot pan. Fry the onions until golden brown, turning them over. Finally, stir in the tomato paste and fry briefly. Season with salt and pepper, add wine and stock. Add marjoram, except for something to sprinkle, and simmer for about 5 minutes in an open pan.

    Lift Maultaschen out of the salt water and let them drain. Heat the fat in a second pan. Fry the Maultaschen briefly while turning. Season onion sauce with salt and pepper, cut Maultaschen into slices.

    Arrange chops with onion sauce and Maultaschen on plates. Sprinkle with marjoram and garnish.
