Poor rabbit with strawberry salsa

Ingredients

Servings: 6
  • 500 g Strawberries
  • 2 TABLESPOONS Coconut blossom sugar
  • 6 Raisin buns (à approx. 50 g)
  • 1 Vanilla pod
  • 20 g soft butter
  • 2 Eggs (size M)
  • 150 ml Milk
  • 6 balls Vanilla ice cream
  • 7-10 Tbsp Coconut blossom sugar

Directions

    Wash and clean the strawberries and cut them into fine cubes. Mix strawberry cubes and coconut blossom sugar. Leave to stand. In the meantime, cut the raisin buns in half horizontally. Cut one half of each roll in the middle. Cut the vanilla pod lengthwise. Scrape out the pulp. Mix vanilla pulp and butter. Whisk eggs and milk.

    Heat vanilla butter in a frying pan. Turn the rolls in the egg milk and fry them in the hot vanilla butter for about 4 minutes on each side until golden brown. Remove.

    Place 2 small pieces of bread on each plate. Place a whole roll slice on each plate as a "head", so that a rabbit head shape is created. Arrange some strawberry salsa and 1 ball of vanilla ice cream on each rabbit head. Sprinkle with coconut blossom sugar. Serve with the rest of the strawberry salsa.
