Poor knights in almond shell with apple compote

Ingredients

  • 1 Vanilla pod
  • 500 g Apples
  • 25 g Sugar
  • 3 TABLESPOONS dry white wine
  • 3 Eggs (size M)
  • 300 ml Milk
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 16 (à 20 g) thin slices of white bread (from the previous day)
  • 4 TABLESPOONS Strawberry Jam
  • 100 g flaked almonds
  • 6 TABLESPOONS Oil
  • 7-10 Tbsp Melissa

Directions

    Cut the vanilla pod lengthwise. Scratch out the pith. Peel and quarter apples and remove the core. Cut apples into small pieces. Caramelise sugar in a pot. Deglaze with white wine.

    Add the apples, vanilla pod and pulp. Cover and simmer for about 10 minutes (depends on the type of apple). Mix eggs, milk, vanilla sugar and salt. Spread half of the white bread slices with jam.

    Add the other half and sprinkle with egg milk. Turn and sprinkle the other side as well. Leave to stand for approx. 5 minutes. Then carefully turn into the flaked almonds. Remove the vanilla pod from the compote, dab dry and set aside for decoration.

    Heat the oil in a pan. Fry slices of bread in it in portions on each side for about 2 minutes. Drizzle with the remaining milk and toss. Remove and keep warm. Cut the knights in half diagonally, arrange on a plate and decorate with lemon balm.

    Decorate apple compote with vanilla pod and serve.
