Poached eggs on cheddar spinach

Ingredients

Servings: 4
  • 120 g Cheddar or Gouda cheese
  • 150 g Whipped cream
  • 800 g Spinach
  • 1 small onion
  • 1 TEASPOON Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 2 TABLESPOONS Vinegar Essence
  • 4 fresh eggs (size M)
  • 4 Stem(s) Chives

Directions

    Grate cheese. Heat the cream and 2/3 of the cheese and simmer over medium heat for 8-10 minutes, stirring occasionally

    Clean the spinach, wash thoroughly and drain well. Peel onion and dice very finely. Melt the fat in a pot. Sauté diced onion for about 3 minutes. Add the spinach and let it collapse. Add cheese cream and season to taste with salt, pepper and nutmeg. Simmer spinach for about 3 minutes

    Bring 1 litre of water to the boil in a saucepan. Add vinegar. Beat the eggs into one cup each and let them slide one after the other into the boiling water. Cook over low to medium heat for about 5 minutes. Lift the eggs out of the water with a skimmer and let them drip off on kitchen paper

    Wash the chives, shake dry and cut into rings. Arrange the spinach on plates, place one egg on each. Sprinkle the rest of the cheese and chives on top
