Creamy spinach with cheddar cheese

Ingredients

  • 7-10 Tbsp Pour 4 pers
  • 4 roughly œufs
  • 120 g de cheddar (ou gouda)
  • 600 g spinach
  • 30 g de beurre
  • 25 cl of single cream
  • 5 cl de vinaigre blanc
  • 8 brins de ciboulette
  • 7-10 Tbsp sel et poivre

Directions

    1 If frozen, defrost the spinach. If not, remove the stalks and wash it. Then, fry them for 3 minutes in a saucepan with the butter. Drain them by recovering their vegetation water.

    2 Grate ¾ of the cheddar cheese. In a saucepan, mix the cream with the spinach juice. Heat and stir in the grated cheddar. Add the spinach, salt and pepper. Mix and keep warm.

    3 Break an egg in a cup. Bring a saucepan of water to a simmer with the vinegar. Form a swirl in the center. Slide the egg in and cook for 3 minutes. Drain and start again with the other eggs.

    4 Divide the spinach between plates, place a poached egg on top. Sprinkle with the remaining shredded cheddar cheese and chives.
