Plums with semolina foam

Ingredients

  • 600-750 g Plums or damsons
  • 75 g + 50 g sugar
  • 2 TABLESPOONS Lemon juice
  • 2 heaped tablespoons (approx. 25 g) Cornstarch
  • 3 Eggs (Gr. M)
  • 400 ml milk, salt
  • 30 g Semolina
  • 2-3 TABLESPOONS flaked almonds
  • 7-10 Tbsp Icing sugar

Directions

    Plums wash, stone. Boil 150-200 ml water, 75 g sugar and lemon juice. Steam the plums for 4-6 minutes. Mix starch and 2 tablespoons of water. Bind the plums with it. Let cool down if necessary

    Separate eggs. Bring milk and 1 pinch of salt to the boil. Stir in semolina and 50 g sugar, bring to the boil briefly and let it swell for about 5 minutes. Stir in egg yolks one after the other. Beat egg white until stiff and fold in

    Pour the plums into an ovenproof dish. Spread semolina foam over it, sprinkle with almonds. Bake in a hot oven (electric cooker: 200 °C/ convection oven: 175 °C / gas: level 3) for 15-18 minutes until golden brown. Then dust with icing sugar

    Who likes, can give the plums an extra touch with a small shot of rum or Amaretto liqueur
