Ingredients

  • 250 g Flour
  • 1 pinch Salt
  • 1 egg (size M)
  • 1/2 cube (21 g) fresh yeast
  • 4 TABLESPOONS + 35 g sugar
  • 30 g Butter or margarine
  • 1/8 l Milk
  • 1 kg Plums
  • 1 Mesp. ground cinnamon
  • 1-2 TEASPOONS Icing sugar
  • 7-10 Tbsp Fat and flour

Directions

    Put flour and salt in a bowl, make a depression in the middle and put the egg in it. Mix yeast and 1 tablespoon of sugar until the yeast becomes liquid. Melt the fat in a saucepan, add cold milk and remove from heat immediately. Add yeast, lukewarm fat-milk mixture and 35 g sugar to the flour. Knead with the dough hook of the hand mixer to a smooth yeast dough.

    Cover and leave to rise in a warm place for about 30 minutes. In the meantime, wash the plums and drain well. Stone the plums and cut the tips. Knead the yeast dough again and roll out into a circle (approx. 30 cm Ø) on a floured work surface. Place the dough in a greased and flour-spread pizza or springform pan (28-29 cm Ø) and press up the edges. Prick the base several times with a fork and cover with plums. Mix 3 tablespoons of sugar and cinnamon and sprinkle the plums with it. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 45-50 minutes. Let the cake cool down in the tin on a cake rack.
