Ingredients

  • 350 g Flour
  • 1 package Dry yeast
  • 50 g + 1 teaspoon sugar
  • 50 g Butter or margarine
  • 450 ml Milk
  • 2 egg (size M)
  • 8-10 Plums
  • 80 g Rice Pudding
  • 7-10 Tbsp Salt
  • 1 package Vanillin sugar
  • 7-10 Tbsp ground cinnamon
  • 1 slightly heaped tablespoon of cornflour
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Sugar
  • baking paper

Directions

    Mix flour, dry yeast and 50 g sugar in a bowl. Melt the fat. Pour 150 ml milk into the butter and let it cool down lukewarm. Add milk-butter-mix and 1 egg to the flour and knead to a smooth dough with the dough hooks of the hand mixer. Cover the dough and let it rest in a warm place for about 45 minutes. Wash, halve and stone the plums.

    Cut half of the plums into small pieces, the other half into slices. Put rice in a sieve and wash thoroughly. Bring 300 ml milk, rice and 1 pinch of salt to the boil and let it swell at low heat for about 20 minutes, stirring occasionally. Knead the dough on a floured work surface and divide into 12 equally sized pieces. Form dough into balls and roll out oval 4-5 mm thin. Put the dough particles on 2 baking trays lined with baking paper and let them rise covered for about 15 minutes. Separate 1 egg. Remove rice pudding from the stove. First stir in vanilla sugar, 1 pinch of cinnamon and starch, then the egg yolk. Let the rice pudding cool down. Fold in plum pieces.

Beat the egg whites until stiff, then add 1 teaspoon sugar. Fold the beaten egg white into the rice pudding. Press the centre of the yeast particles a little flat and spread the rice pudding in the middle. Bake the baking trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 20 minutes. After about 15 minutes, place the plum wedges on the pieces and sprinkle with a little sugar. Serve lukewarm
