Ingredients

  • 260 g Plums (= approx. 1 1/2 glass [370 ml] from the jar; suitable for diabetics)
  • 60 g Low-fat curd
  • 2 tablespoons (20 g) Oil
  • 6 tablespoons (60 ml) Milk
  • 15 g Fructose
  • 7-10 Tbsp Salt
  • 130 g dark wheat flour + something for the work surface (Type 1050)
  • 1 coated Tsp Baking Powder
  • 1 egg (size M)
  • baking paper

Directions

    Drain plums well and cut into slices. Mix quark, oil, 5 tablespoons of milk, 12 g fructose and 1 pinch of salt. Mix flour and baking powder and knead. Roll out the dough to a rectangle (approx. 20 x 32 cm) on a lightly floured work surface and divide into 4 rectangles (approx. 10 x 16 cm). Cover 1 half each with plums. Separate the egg. Spread the edges of the dough with egg white, fold over and press on.

    Cut the pockets a little bit. Put them on a baking tray lined with baking paper. Bake in the preheated oven (electric cooker: 200 ° C / gas: level 3) for 15-18 minutes. Mix the egg yolks and 1 tablespoon of milk. Brush pockets with it and bake for another 5-10 minutes. Allow to cool and sprinkle with 1/2 teaspoon (3 g) fructose
