Ingredients

  • 1 kg leaf spinach
  • 3 Onions
  • 1 Garlic clove
  • 20 g Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Plaice fillets without skin (600-700 g)
  • 1/8 l dry white wine
  • 1/8 l Fish stock (from the glass)
  • 2-3 discs of 1 untreated lemon
  • 6-8 Peppercorns
  • 40 g streaky smoked bacon
  • 2 TABLESPOONS Schmand
  • 1-2 TABLESPOONS sauce thickener
  • 1 Egg Yolk
  • 7-10 Tbsp Grease
  • 8 wooden skewers

Directions

    Clean the spinach, wash thoroughly several times and drain. Peel onions and garlic. Dice onions, press garlic through a garlic press. Heat the fat in a pot, fry the garlic and 1/3 of the onions in it until transparent. Add spinach and steam for about 3 minutes until it has collapsed. Season with salt and pepper.

    Wash the plaice fillets, dab them dry and cut them in half lengthwise. Season fillets with salt and pepper, roll them up and fix them with wooden skewers. Boil up white wine, fish stock, lemon slices, peppercorns and a little salt. Put the plaice rolls in the stock, cover and cook over a low heat for about 4 minutes. In the meantime, cut the bacon into fine cubes and leave to drain in a small pan until crispy. Add the rest of the onions, fry briefly and remove from the heat. Put the spinach into a greased, ovenproof dish. Lift the plaice rolls out of the stock and place them on the spinach. Pour the stock through a sieve. Stir in sour cream and bring the stock to the boil. Stir in the sauce thickener and bring to the boil again briefly. Take the sauce off the stove, stir the egg yolks into the sauce and season with salt and pepper.

    Lift the plaice rolls out of the stock and place them on the spinach. Pour the stock through a sieve. Stir in sour cream and bring the stock to the boil. Stir in the sauce thickener and bring to the boil again briefly. Take the sauce off the stove, stir the egg yolks into the sauce and season with salt and pepper. Pour sauce over the plaice rolls and sprinkle with bacon-onion mixture. Bake in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for about 15 minutes. Tastes good with mashed potatoes
