Ingredients

  • 100 g small dried white beans
  • 1 medium onion
  • 1 Garlic clove
  • 4 TABLESPOONS Oil
  • 1 (approx. 100 g) medium-sized carrot
  • 50 ml dry white wine
  • 2 Branches of rosemary and thyme
  • 1 large laurel leaf
  • 400 g Potatoes
  • 7-10 Tbsp Salt
  • 2 medium sized plaice ready for cooking (approx. 400 g each)
  • 1 untreated lemon
  • 2 discs Parma ham (about 20 g each)
  • 2-3 stem(s) Parsley
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Flour
  • 1 Tomato

Directions

    Soak the beans in approx. 200 ml cold water for approx. 12 hours. Peel onion and garlic and dice finely. Heat 1 tablespoon of oil in a saucepan and sauté the onion-garlic mixture. Clean, peel and finely dice the carrot. Add carrots and deglaze with white wine. Add the beans with the soaking water and simmer for about 50 minutes. Wash the rosemary and thyme, dab dry and, except for something to garnish, add to the beans with bay leaves.

    Meanwhile, peel and wash the potatoes and cook in boiling salted water for about 20 minutes, drain and drain. Wash the plaice, dab dry and loosen the brown skin with a sharp thin knife. Cut off the outer bones with scissors. Wash lemon thoroughly, rub dry and cut into approx. 4 slices. Cut Parma ham into slices of about 2 cm. Wash parsley, dab dry, pluck leaves from the stalks and cut into fine strips. Season the plaice with salt and pepper. Dust with flour from both sides. Heat 1 tablespoon of oil in each of 2 coated pans and fry the plaice for about 5 minutes on both sides at medium heat. Add the lemon and Parma ham to the plaice about 1 minute before the end of the frying time and fry with them. Keep the plaice warm. Heat the remaining oil in a frying pan and fry the potatoes for 6-8 minutes. Season with salt and pepper.

    Season the plaice with salt and pepper. Dust with flour from both sides. Heat 1 tablespoon of oil in each of 2 coated pans and fry the plaice for about 5 minutes on both sides at medium heat. Add the lemon and Parma ham to the plaice about 1 minute before the end of the frying time and fry with them. Keep the plaice warm. Heat the remaining oil in a frying pan and fry the potatoes for 6-8 minutes. Season with salt and pepper. Wash and chop the parsley. Wash tomato, remove seeds. Dice the flesh. Stir parsley and tomato into the beans. Arrange plaice with beans, lemons and Parma ham on plates and garnish with the remaining herbs. Serve potatoes extra
