Plaice fillets with tomato-basil vinaigrette

Ingredients

  • 200 g Plaice fillet
  • 1-2 TABLESPOONS Lemon juice
  • 150 g Tomatoes
  • 2 TABLESPOONS White wine vinegar
  • 1 TABLESPOON Balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper or lemon pepper
  • 2 TABLESPOONS Oil
  • 1/2 potty Basil
  • 1 TEASPOON Flour
  • 15 g Butter or margarine

Directions

    Wash the fish fillet, dab dry and cut in half lengthwise. Sprinkle with lemon juice and leave to stand. Wash and clean the tomatoes, dab dry, cut in half and remove the seeds. Dice the tomato halves. Mix vinegar, salt and pepper. Whip oil into it. Wash the basil and cut it finely except for a little bit for garnishing and finally add it to the vinaigrette.

    Dab fillets dry, salt and lightly dust with flour. Fry them in hot fat in a coated pan for 3-4 minutes, turning them until golden brown. Serve with tomato cubes. Top with basil vinaigrette. Serve garnished with basil. Serve with baguette
