Wash the potatoes and cook in boiling water for about 30 minutes. In the meantime peel onion and garlic. Chop the onion finely. Chop garlic finely. Heat oil in a pan. Fry onion and garlic in it until transparent.
Add minced meat and fry until crumbly. Add tomato paste and stir in. Season with salt and pepper. Wash thyme, dab dry and pluck leaves from the stalks, except some for garnishing. Add thyme to the mince. Wash the tomatoes, rub dry and cut into 16 slices. Drain mozzarella and cut into 8 slices. Drain potatoes, rinse and peel. Cut potatoes lengthwise in half. Spread the minced meat on the cut surfaces and cover with tomato and mozzarella slices. Season with salt and pepper. Place on a baking tray lined with baking paper.
